How Do I Make Healthy Food Actually Taste Good?

Healthy food tastes bad for one of three reasons: it is under-seasoned, it is under-cooked, or it is built without a sauce or dressing that ties everything together. None of these problems are fixed by using less-healthy ingredients. They are fixed by technique.

Season properly

Most bland healthy food is under-salted. Salt does not just make food salty. It amplifies everything else. Use it at every stage: salt the water, season the protein before it cooks, add a pinch to the vegetable before it roasts. Taste and adjust at the end.

Build flavor through browning

Steamed chicken and roasted chicken are nutritionally similar. They taste completely different. The Maillard reaction, the browning that happens when food makes contact with high heat, creates hundreds of flavor compounds that do not exist in the raw ingredient. Roast, sear, and caramelize rather than boil and steam whenever you can.

Add acid

A squeeze of lemon, a splash of vinegar, or a spoonful of something pickled transforms a dish that tastes dull into one that tastes bright and complete. Acid is the most underused tool in healthy cooking. Add it at the finish, after the heat is off.

Build a sauce

The sauce is where most of the flavor lives. A tahini dressing, a yogurt sauce, a vinaigrette, a quick pan sauce with lemon and olive oil: these are what separate food that tastes like a healthy meal from food that tastes like dinner.
