What Can I Use Instead of Heavy Cream?

Heavy cream adds richness and body to a dish. The right substitute depends on what you are making: a soup, a sauce, a dessert, or a baked good. These are the options that actually work.
Greek yogurt
The best swap for most savory applications. It adds creaminess, a slight tang, and protein. Use full-fat Greek yogurt and add it off the heat so it does not curdle. Works well stirred into soups, stews, and sauces at the finish. The Lentil Spinach Stew and the Hungarian Chicken Paprika both use yogurt this way.
Coconut milk
Full-fat coconut milk is the best dairy-free substitute. It has a similar fat content to heavy cream and creates the same rich, velvety texture. It adds a coconut flavor, which is a plus in Thai, Indian, and Caribbean dishes and a minus in neutral European sauces. The Creamy Lentil and Chicken Soup and the Sweet Potato and Lemongrass Almond Butter Curry both use coconut milk as the base.
Blended silken tofu
Blend silken tofu until completely smooth for a neutral, protein-rich cream substitute. Works best in blended soups and sauces where the texture becomes seamless. One cup of silken tofu blended replaces one cup of heavy cream.
Evaporated milk
Not the same fat content as heavy cream, but a solid substitute for lighter cream sauces and soups where you want dairy flavor without the full richness. Use it in a one-to-one swap.
