Vegetarian Egg Bites with Spinach, Beans & Feta

Ingredients
- 20 oz spinach chopped
- 1/4c Garlic chopped
- 1/4c Green onions chopped
- 2-15oz cans Black beans
- 1-15oz can Kidney beans
- 8oz Feta
- 2-3 Serrano chopped (optional)
- 1 tbl Nutmeg
- 2 tsp Salt
- 15 Eggs
- 1/2 cup Canola oil
- 1 cup Self rising flour (1c GF flour, 1 1/2 tsp baking powder, 1/2 tsp salt)

Preheat oven to 350 degrees.

In a large bowl combine spinach, garlic, green onion, feta, all beans, Serrano, nutmeg, and salt.

Whisk the eggs in a medium bowl then add the canola, whisk, and add to the vegetable mix.

Make the self-rising flour: Add the flour, baking powder, and salt to a small bowl and mix. Add to the vegetable bowl and mix.

Add the 2 tsp salt, and mix well again. Grease or spray muffin pans. Use a 1/4c measuring cup to add the mix into each muffin cup.

Bake for about 20 minutes, rotate the pan for even cooking then bake for another 10-15 minutes depending on your oven.
