Boiled Egg hummus on Keto Toast

This is an easy recipe and healthier alternative to using Mayo. This is a great way to add more fiber to the already protein rich dish. It is a great quick and easy week day dish or a great lunch option. This is pictured with a Roasted Spicy Garbanzo Bean side (recipe on this site).

Boiled Egg hummus on Keto Toast

Ingredients

Scale:
  • 3 eggs
  • 2 oz chopped pickle
  • 1 oz hummus
  • 1/2 teaspoon paprika (plus garnish)
  • Pinch of salt
  • 1 teaspoon lemon
  • 1/2 teaspoon chopped mint

Directions

    Put the eggs in a pot and cover with water.

    When the water boils start a timer for 10 minutes.

  3. 3

    When the timer goes off rinse the eggs by adding cold water to the hot water in the pot until the eggs cool.

    Peal the eggs and chop then add to a large bowl.

  5. 5

    Mix in the rest of the ingredients.

    Garnish with a little more paprika and mint.
