Why Is My Rice Mushy?

Mushy rice means one or more of these things happened: too much water, too long on the heat, or too much stirring.
Check the water ratio
Most white rice follows a 1:1.5 ratio (one cup rice to one and a half cups water). Brown rice needs more water and more time. If you used the same ratio for both, that explains the problem. Check the specific ratio for the variety you are cooking.
Do not lift the lid
Steam is what cooks the top half of the rice. Every time you open the pot, you release steam and throw off the cooking. Put the lid on, leave it alone until the time is up.
Do not stir it
Rice releases starch when agitated. Stirring mid-cook makes it gummy and sticky. Bring it to a boil, stir once, put the lid on, reduce the heat, and do not touch it.
Let it rest
After the water absorbs, pull it off the heat and let it sit covered for 5 to 10 minutes. This step allows the moisture to redistribute and the grains to firm up slightly. Then fluff with a fork, not a spoon.
