How Do I Know When Chicken Is Done Without Drying It Out?

This is one of the most common cooking problems there is. Overcooked chicken is dry and chalky. Undercooked chicken is unsafe. The margin feels narrow, but it does not have to be.
Use a thermometer
The only reliable answer is a meat thermometer. Chicken is done at an internal temperature of 165 degrees Fahrenheit. Pull it at 160 and let it rest. Carryover cooking brings it the rest of the way. This is the method that actually works, and it removes the guesswork entirely.
Breast vs. thigh
For chicken breast specifically: thinner pieces cook faster than you think. Pounding to even thickness before cooking helps enormously. Uneven thickness means the thin end overcooks before the thick end reaches temperature.
For chicken thighs: they are more forgiving than breast because of the higher fat content. They can go to 165 and still feel juicy. They are a better choice for anyone still building confidence with chicken doneness.
The Healthy Chicken Skewers with Creamy Garlic Yogurt Sauce use smaller pieces that cook quickly and evenly. The Spicy Chicken and French Lentil Bowl slices the chicken before serving so you can see when it is cooked through. The Hungarian Chicken Paprika uses a braising method that makes overcooking nearly impossible.
