Bok Choy and Broccoli with Caramelized Onion
This is a colorful and delicious vegetarian dish. A lot of fiber and nutrient dense vegetables. You can pair it with fish or it could be a stand alone as a one dish meal.
Ingredients:
1 Red onion thinly sliced
1 tbls olive oil
Pinch of sugar
2 tbls Olive oil
3-4 Garlic cloves chopped
2 tbls Ginger chopped
2 cups Broccoli cut into bite size pieces
2 heads of Bok Choy cut into bite size pieces (leaves separated from stems)
2 yellow or Orange peppers
2 cups Red cabbage
1/4 cup Soy sauce
1 tbls Salt
2 tbls Korean peppers (or any pepper of your choice) optional
1 Lime (plus extra for garnish)
Garnish with
Peanuts (optional)
Cilantro
Lime
Directions:
In a sauté pan add the olive oil. When hot add the red onion and sugar. Sauté stirring frequently for about 10-15 minutes until the onions start to soften and caramelize.
Meanwhile in a separate large pan add the olive oil then garlic and ginger. Sauté for about 2 minutes until fragrant.
Add the broccoli and continue to sauté until the broccoli starts to soften.
Add the stems of the bok choy continue to sauté for another 4-5 minutes. Then add the yellow or orange pepper and red cabbage.
After about 3 minutes add the soy sauce, salt, Bok Choy leaves, and Korean peppers (if using).
Add the lime and simmer until all vegetables are cooked down.
Add the caramelized onion to the pan. Stir to combine.
To plate:
Add the vegetables to a plate then garnish with peanuts ( if using), cilantro, and a lime wedge.
