Traditional Salsa Rojo with Tomatillos & Lime

Ingredients
- 8 tomatillos, husked and rinsed
- 6 guajillo chiles, stems and seeds removed
- 1/2 onion, roughly chopped
- Salt, to taste
- A pinch of sugar
- Fresh cilantro, chopped (a small handful or to taste)
- Juice of 1 lime

Cook the Tomatillos: In a pot, bring water to a boil and add the tomatillos. Boil for about 5-7 minutes, until they’re softened and their color turns to a muted green. Drain and let cool slightly.

Prep the Guajillo Chiles: Toast the guajillo chiles in a dry skillet over medium heat for about 30 seconds per side until fragrant. Be careful not to burn them, as this can make the salsa bitter. Remove from heat.

Soften the Chiles: Place the toasted chiles in a bowl of hot water and let them soak for about 15 minutes, or until they’re softened. Blend In a blender, add the softened tomatillos, guajillo chiles, cilantro, chopped onion, lime, a pinch of salt, and sugar. Blend until smooth.

Season and Garnish: Pour the salsa into a bowl, adding more lime and cilantro as desired.

Serve: This salsa is delicious with baked tortilla chips, tacos, eggs, or as a topping for your favorite Mexican dishes!
