Why Is My Ground Meat Not Browning?

If your ground meat is steaming and turning gray instead of browning, it is almost always one of these two problems.

The pan is not hot enough

Ground meat needs medium-high to high heat to brown. If the pan is too cool, the meat releases moisture faster than it evaporates, and the meat essentially poaches in its own liquid instead of making contact with the hot surface.

You added too much at once

A full pound of ground meat dumped into the pan at once drops the temperature significantly. The moisture released from that much protein has nowhere to go except to pool in the pan. Cook in smaller batches, or use a wider pan to spread it into a thin layer.

The fix

Heat the pan first until it is hot, add the meat in an even layer, and do not stir it immediately. Let it sit and make contact with the pan for a minute or two until you see browning on the edges, then break it up. Resist the urge to stir constantly.
