Why Did My Sauce Break or Separate?

A broken sauce, where the fat separates and pools on top instead of staying incorporated, is a technique issue, not a lost cause. It usually means the emulsification failed, and it can often be fixed.

Why it happens

Emulsified sauces stay together through a balance of fat, liquid, and an emulsifier like mustard, egg yolk, or tahini, combined with enough agitation to keep them bonded. Too much heat, adding ingredients too quickly, or skipping the emulsifier breaks that bond.

How to fix a pan sauce

If the butter sauce breaks, pull the pan off the heat, add a small splash of cold water, and whisk vigorously. The cold water and motion can bring it back together.

How to fix a vinaigrette

Pour everything back into the jar or blender and re-emulsify. Adding a tiny bit more mustard helps because mustard is one of the most effective natural emulsifiers.

How to fix a cream sauce

A broken cream sauce often means the heat was too high. Pull it off, let it cool slightly, and stir slowly rather than whisking hard. Adding a tablespoon of cold liquid and gentle heat can bring it back.
