Which Meals Freeze and Reheat Well?

Knowing which dishes freeze well is one of the most useful things to understand for healthy eating on a busy schedule. Cook once, eat three times is a real strategy when you know what to make.

Freezes and reheats well

Soups and stews are the best freezer food. They reheat evenly, the flavor often improves after freezing and thawing, and they portion easily into individual containers. The Lentil Spinach Stew, the Spicy Ginger Garlic Chicken Soup, and the Marry Me Chickpea Soup all freeze excellently.

Braises and slow-cooked meats: the liquid protects them during freezing and reheating. Cooked grains (rice, farro, quinoa): freeze in portion-sized bags and reheat from frozen in a pan with a splash of water. Cooked legumes: freeze beautifully and thaw quickly.

Does not freeze well

Salads and raw greens: they turn soggy and unpleasant. Fried and crispy foods: they lose the texture that makes them good. Egg-based dishes like frittata: the texture becomes rubbery. Delicate fresh fish: the texture degrades significantly. Dishes with cream-based sauces: the fat separates on thawing, though they can often be rescued with a gentle reheat and whisking.

How to freeze properly

Cool completely before freezing. Use airtight containers or freezer bags with the air pressed out. Label with the date and contents. Most soups and stews keep for 3 months in the freezer. Thaw overnight in the fridge or reheat directly from frozen over low heat with the lid on.
