How Do I Fix a Dish That Tastes Flat?

A dish that tastes flat is usually missing one of four things: salt, acid, fat, or heat. Running through those four in order fixes most problems.

Salt first

Underseasoning is the most common reason food tastes flat. Add a small pinch, stir, taste again. Salt does not just make food salty. It amplifies every other flavor in the dish. If something tastes like nothing, salt is usually the first answer.

Acid second

A squeeze of lemon juice, a splash of vinegar, or a spoonful of something pickled can completely change a dish that tastes dull or heavy. Acid brightens flavor and cuts through richness. Fat third

Heat fourth
