How Do I Caramelize Onions Properly?

Caramelized onions are one of the most transformative things you can make in a home kitchen. They turn something sharp and raw into something deeply sweet, savory, and rich. They also take longer than most recipes admit.
Real caramelized onions take 30 to 45 minutes over low to medium-low heat. Any recipe that tells you 10 minutes is describing softened onions, which are good, but not the same thing.
The process
Slice onions thin and even. Heat a wide pan with a small amount of butter or olive oil over medium-low heat. Add the onions and a pinch of salt. The salt draws out moisture and helps the process along. Stir occasionally, not constantly, and let them sit long enough to make contact with the pan and start to color.
As the moisture cooks off the onions will shrink dramatically and turn golden, then amber, then deep brown. That color is sugar breaking down. That is what you are waiting for. If the pan gets too hot and the onions start to burn rather than brown, add a small splash of water and scrape up anything stuck to the bottom.
