Mediterranean Sweet Potato Salad with Basil & Pine Nuts

Ingredients
- 4 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 c grated Parmesan cheese
- 1/4 c chopped fresh basil
- 1/4 c pine nuts, toasted
- 1/2 c cherry tomatoes, halved

Preheat your oven to 400°F (200°C). In a large bowl, toss the sweet potato cubes with the oil, Italian seasoning, garlic powder, paprika, salt, and pepper until evenly coated.

Spread the sweet potatoes in a single layer on a baking sheet. Roast for 30-35 minutes, or until the sweet potatoes are tender and golden brown, tossing halfway through.

Remove from the oven and transfer to a serving bowl. Sprinkle with toasted pine nuts, cherry tomatoes, cheese, and fresh basil.
