Lupini bean salad with asiago cheese, pine nuts, and balsamic vinaigrette

Ingredients

Scale:
  • 3 cups beans
  • 6 cups fresh arugula
  • 1 cup cherry tomatoes halved
  • 1/4 cup olive oil
  • 1 cup pine nuts (roasted)
  • 2 tbls balsamic vinegar
  • 2 tbls lemons
  • 1/4 cup avocado oil
  • Pinch of salt chopped parsley (optional)
  • red pepper flakes (optional)
  • 1/4 asiago cheese grated with a potato peeler + garnish per serving

Directions

    In a small hot pan roast the pine nuts for 30-45 seconds stirring constantly.

    In a medium bowl add the balsamic vinegar, lemon juice, and salt.

    Whisk as you slowly drizzle the avocado oil into the bowl.

    In a large bowl add the arugula then pour 1/2 of the vinaigrette and toss well the vinaigrette will start to wilt the arugula which is what you want.

    Add the Lupini beans, cherry tomatoes, pine nuts, parsley, salt, and asiago cheese. Toss again.

    Serve in individual bowls, garnish with pepper and asiago cheese.
