Refreshing Dragon Fruit Salad with Honey Mint Dressing

Ingredients

Scale:
  • 1 red dragon fruit
  • 1 white dragon fruit
  • 2 persimmons quartered
  • 1 cup blueberries
  • 2 kiwi peeled and quartered
  • 1 cup strawberries Honey Mint Dressing
  • 3 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 tbls Just Better Fiber
  • 1 tsp allulose
  • 2 tablespoons fresh mint chopped finely, plus garnish

Directions

    Cut the dragon fruit lengthwise. Core out the flesh and cube.

    Add all the fruit salad ingredients together in a bowl.

    In a separate bowl add the dressing ingredients and mix.

    Drizzle over the salad.
