Ingredients

- 1 red dragon fruit
- 1 white dragon fruit
- 2 persimmons quartered
- 1 cup blueberries
- 2 kiwi peeled and quartered
- 1 cup strawberries Honey Mint Dressing
- 3 tablespoons lemon juice
- 2 tablespoons honey
- 1 tbls Just Better Fiber
- 1 tsp allulose
- 2 tablespoons fresh mint chopped finely, plus garnish

Cut the dragon fruit lengthwise. Core out the flesh and cube.

Add all the fruit salad ingredients together in a bowl.

In a separate bowl add the dressing ingredients and mix.
