Who doesn't love brownies especially when they can be on the healthy side. This is a great dessert with almond butter and milk. I added JustBetter fiber to help balance the sugar spike and used Procare dark chocolate bars but you can use dark chocolate chips.
Sweet Potato Brownies
Who doesn't love brownies especially when they can be on the healthy side. This is a great dessert with almond butter and milk. I added JustBetter fiber to help balance the sugar spike and used Procare dark chocolate bars but you can use dark chocolate chips.
Ingredients:
1.5 cups cooked sweet potato
1/2 cup almond butter
1/4 cup almond flour
1/4 cup cocoa
1/2 cup natural honey
2 tbsps olive oil
1 tsp vanilla
1/4 tsp baking soda
1/4 tsp baking powder
Directions:
Preheat oven to 350 F.
Using a fork carefully poke holes all around the sweet potatoes then place them in a microwave for about 20 minutes depending on size. They need to be soft and mashable.
Let them cool slightly and peel the skin off (it will come off easily with your fingers).
Put the sweet potatoes in a large bowl and mash with a fork or a masher.
Mix all ingredients together in the bowl including the chocolate chips.
Pour into 9x9 baking pan lined with parchment or use cooking spray.
Top with more chocolate chips.
Bake for 25-30 min!
Let cool.
