Try this delicious Baked Tilapia with Lemon—a light, flavorful meal inspired by Mediterranean cuisine! With cherry tomatoes, feta, and a hint of smoked paprika, this dish is perfect for a healthy and easy weeknight dinner. Ingredients:
1.5 cups cherry tomatoes, sliced in half
2 large shallots, sliced
4-5 garlic cloves, chopped
1-2 lemons, thinly sliced
2 tbls olive oil, divided
3/4 tsp salt
8 oz feta cheese
1 1/2 pounds tilapia
2 tbls capers
1 tbls Italian seasoning
1 tsp red pepper flakes
2 tsp smoked paprika
Garnish chopped fresh basil (chopped)and fresh pepper
Instructions:
Preheat oven to 425 degrees.
Add tomatoes, shallots, and garlic in the bottom of a baking dish and mix well.
Add the lemon slices in a single layer. Sprinkle with salt and pepper. Add cheese
Rinse and pat the tilapia dry then rub with 1 tbls olive oil and add to baking dish.
Add the capers, Italian seasoning, red pepper flakes, and smoked paprika.
Bake 20 to 25 minutes (depending on the thickness of the fish), until the fish is flaky.
To serve add the fish to a plate. Top with vegetables and garnish with chopped basil.
