Ingredients:

3 cups old-fashioned rolled oats

1 cup nuts (almonds, walnuts, pecans), roughly chopped

1/2 cup seeds (pumpkin seeds, sunflower seeds, or chia seeds)

1/2 cup unsweetened shredded coconut (optional)

2 tbsp Just Better Fiber

1/4 cup allulose

1/4 cup coconut oil, melted

1/4 cup honey (for binding and slight sweetness)

1 tsp vanilla extract

1 tsp cinnamon

1/4 tsp salt

Optional add-ins: 1/2 cup dried fruit (raisins, cranberries)

1/2 cup dark chocolate chips (add after baking)


Instructions:

Preheat the Oven:

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

In a large bowl, combine oats, nuts, seeds, Just Better Fiber, and allulose.

In a small bowl, whisk together coconut oil, honey, vanilla, cinnamon, and salt.

Pour the wet ingredients over the dry ingredients and stir thoroughly, evenly coating.


Spread in an even layer on  baking sheet.

Bake for 25-30 minutes, stirring every 10 minutes for even browning. The granola should be golden and fragrant.

Remove from the oven and let the granola cool completely. (it will crisp up as it cools).

Once cooled, add dried fruit or chocolate chips, if desired, and mix well.

Store in an air tight container.
