Ingredients

1 red dragon fruit 

1 white dragon fruit

2 persimmons quartered

1 cup blueberries 

2 kiwi peeled and quartered 

1 cup strawberries 


Honey Mint Dressing

3 tablespoons lemon juice

2 tablespoons honey

1 tbls Just Better Fiber

1 tsp allulose

2 tablespoons fresh mint chopped finely, plus garnish 



Directions:


Cut the dragon fruit lengthwise. Core out the flesh and cube.

Add all the fruit salad ingredients together in a bowl.

In a separate bowl add the dressing ingredients and mix.

Drizzle over the salad.

Garnish the salad with additional mint leaves.
